egg yolk
sal/pepper

of citrus vinegar
or any other vinegar of your choice

of good quality olive oil
Instructions
In the center of a serving bowl. Add the yolk of one egg, sprinkle with salt and pepper
Add citrus vinegar and whisk together
While whisking, begin to drizzle in the olive oil slowly. The vinegar and oil should begin to emulsify and thicken.
Once the olive oil is incorporated, continue to whisk vigorously for 30 seconds, or until the dressing becomes light and airy.
You may need to add more vinegar/olive oil depending on how acidic you like your dressing
