On nights when I can’t cook…

I let someone else do the work! 

My biggest “mom-hack” of 2020 – letting other people help!!!  In this case, it’s Noodles & Company helping this tired mama with dinner.  

As a busy mama, with four kids, our nights are filled with activities and it can be hard to find the time to cook a healthy meal for my crew – especially one that they’ll actually EAT!  Which is why I’m so thankful I found Noodles & Company and their new cauliflower noodles.  You heard me right.  #Caulifoodles jam-packed with a full serving of veggies – right in the pasta!  Even if you love or hate cauliflower, you’ll be amazed at how delicious these new cauliflower infused noodles are.  

You guys, I’m far from perfect.  Like really far.  And there are just a lot of nights when trying to come up with a “healthy” option for my kids just feels like another thing on my “to-do” list.  Especially at the end of the day.  Sometimes I need a little help.  And if I’ve learned anything this year – it’s that even though I LOVE to cook, sometimes eating out, or ordering in just makes life a little easier.  And I know we could ALL use the help. I order dinner a few times a week, and Noodles & Company is a great “go-to” for me to pick up quickly when I’m on the go.

The great thing about all of the #Noodlesandcomapny dishes is that ANY of the pasta dishes can be substituted with their new cauliflower noodles (and at no extra cost).  That’s a whole extra serving of veggies for my kids, that I don’t have to think about.  For me, I call that a win.

And what’s even better, is that they’re honestly delicious, and there’s something there for our whole family. 

Sloan and Frankie love the Noodles & Company traditional mac-n-cheese.  Filled with gooey cheesy goodness that they can’t get enough of.  

While JonPaul and Lillian love the Cauliflower Rigatoni Fresca with shrimp.  It has the #Caulifloodles filled with spinach, shrimp, tomatoes, and roasted garlic all covered in a light and refreshing balsamic vinaigrette.  It’s honestly delicious.  The perfect light dish when you want to eat something a little healthier, but still so satisfying and delicious.

It’s everything you know and love about pasta, but now with an extra serving of vegetables.  An easy “go-to” dinner for all those busy weeknights, that you can actually feel good about.

So while I’d love to be Martha Stewart in the kitchen every night of the week, making a homemade meal for my family – at the end of the day, I’m pretty ok just being “me”.  Doing my best, getting through the day, and sneaking in a vegetable or two for my kids wherever I can.
