Oatmeal power bites

When I was a little girl, every day my mom had fresh chocolate chip cookie waiting for me when I got off the school bus.  I know, right?  How lucky was I?  She was (and still is) amazing.  And to top it off, they were great cookies.

Now I may not be the Betty Crocker home maker that she was, but I’m slowly learning to hold my own.  So in an effort to follow in her footsteps, I’m giving her old milk and cookies routine a new twist for my kiddos.

My little guys are always begging for after school snacks.  When they run in the house after school it is literally the first thing they ask for (I don’t even get a hello most days).  Now if you’ve been following me, you know from a recent post (making homemade Peeps!), that I am certainly not afraid to let them indulge in some sugar every now and then.  But for our “every day” treats, I wanted to come up with something a tad healthier, that they would still love.

So this is what I’m calling “milk and cookies”.  It’s really a no bake oatmeal bite, packed with nutrition.  It’s filled with oatmeal, wheat germ, coconut, and chia seeds.  To sweeten it I used honey and peanut butter (my oldest has a tree nut allergy, but almond butter in this would be great too).  I also opted to skip the chocolate chips (I know my mom is cringing as she’s reading this….sorry, mom 😉 and used cacao nibs.  They are a little bitter in comparison to traditional chocolate chips, but in something like this where you have a sweetener (the honey) it’s pretty hard to tell.  Plus, as an added bonus, they’re a super food, so I think we can give these little nibs a break 😉

My favorite part about these “cookies” is that you never have to turn your oven on.  I mix it all together in a bowl, roll them out on a cookie sheet, let them set, and then store in the freezer.  It honestly takes no more then ten minutes.  Then the kids and I can grab them from the freezer when we’re running out the door and need a little pick-me-up, or need a sweet treat in the afternoon.

So these might not be my Mom’s tollhouse chocolate chip cookies, but they’re a delicious (and really nutritious) little bite that I think you’ll love. So go grab yourself a glass of milk and enjoy!

Recipe:

Chocolate oatmeal bites

Serves: 12 bites
Prep Time :5 minutes
Cook Time :10 minutes
Total Time :15 minutes

Ingredients:

  • 1 cup of rolled oats
  • 1/2 cup of shredded coconut
  • 1/4 cup of wheat germ
  • 1/4 cup of cacao nibs
  • 2 tbsp of chia seeds
  • 3/4 cup of peanut butter or almond butter
  • 1/3 cup of honey
  • 1 tbsp of vanilla extract

Instructions:

  • Combine the rolled oats, coconut, wheat germ, cacao nibs and chia seeds in a large mixing bowl. Gently mix together.
  • In a separate bowl add vanilla, peanut butter and honey. Gently mix together.
  • Combine peanut butter mixture into rolled oats mixture and gently incorporate until small crumbles begin to stick together. (Add more peanut/butter if your mixture is too dry and not coming together, or more oats if it is too wet. Sometimes you have to play around a bit to get the consistency you like).
  • Working with your hands, roll small the dough into small balls, about 1" diameter and place on a cookie sheet lined with parchment paper.
  • Freeze for 20 minutes.
  • Remove from the freezer and enjoy!
  • You can also store these in the freezer in a ziplock baggie and thaw whenever you want to enjoy.
