Our ultimate smoothie recipes

January is a time to set new routines and make new starts.  For JonPaul and I, one of those was to be mindful of how we eat.   Trying to be better about eating real, whole foods.   For the most part, eating healthy for lunch and dinner came somewhat easy.  But where we often struggled was breakfast…..because let’s be honest, this house lives on pancakes (although they really are sooo good, it’s kind of not my fault).

We had to revamp our morning routine.  For me, that meant no more bagels or eating left over waffle scraps from my kids plates (am I the only one who finishes off my kids plates?!  It’s like I consume an additional meal just from their scraps!  Oops!).   And for both of us…it meant putting our Vitamix to a morning workout and enjoying some smoothies.

Smoothies are an easy, fast way to get all the nutrients and fuel you need to get your day started.  While we have played with lots of variations of smoothies over the years, I’ve rounded up my three favorites for all of you.

Our Green Machine is bright and refreshing with a hint of tartness at the end.  I’ve packed in spinach, kale, lemon, pineapple and apple.  I know it may not sound appealing to start your day with spinach, but I promise you that this is a really delicious and incredibly healthy way for you to start your morning.  This is also a great “green smoothie” to try if you’re new to the green smoothie world.  It’s not overly bitter, or “green” (you really taste more apple/pineapple than anything…don’t let the color scare you.

The Mango smoothie is like a Caribbean vacation in a glass.  Filled with coconut milk, almond butter, pineapple, mango, cinnamon and chia seeds, it’s creamy, sweet and incredibly filling.  The almond butter provides a hearty feel to the smoothie while the fruit balances off the sweetness from the earthy almonds.

My personal favorite (and one I make for my kids all the time), is our Very Berry Smoothie.  Filled with almond milk, raspberries, blueberries, cinnamon and flax seeds, it’s refreshing, sweet and packed with goodness.  The flax seeds add an extra layer of fiber and omega 3s, and a delicious nutty element.  While the cinnamon creates a subtle warm note to this chilly drink.  We can’t get enough of it in our house (that….and pancakes of course.  Balance 😉

And probably my favorite part about these nutritious drinks…you can make them in advance!  Who couldn’t use a simpler morning routine?  I usually make a large batch of one or two of these recipes, and then store them in mason jars in the fridge for a few days.  When I wake up in the morning, and am in the midst of craziness with the kids, it’s great just opening up the fridge door, giving my mason jar a shake and I am all set.  Not a bad way to start the day.

Recipe:

Green Machine Smoothie

Serves: 2 servings
Prep Time :5 minutes
Cook Time :1 minute
Total Time :6 minutes

Ingredients:

  • 1 cup of almond milk
  • 1/2 cup of cold water
  • 4 stalks of kale with the stems removed and leaves chopped
  • 1 packed cup of spinach
  • 1 apple cut into cubes
  • 1 lemon with the rind removed and cut in half
  • 1/2 cup of pineapple

Instructions:

  • In you high power blender, add almond milk, water, kale and spinach. Give a quick blend. Next add apple, lemon and pineapple. Blend until fully combined, about one minute.
  • Endjoy

Mango Madness Smoothie

Serves: 2 servings
Ingredients
  • 1½ cups of coconut milk
  • 2 tbsp of almond butter
  • 1 cup of frozen pineapple
  • 1 cup of frozen mangos
  • 1 tbsp of chia seeds
  • 1 tsp of cinnamon
Instructions
  1. In a high power blender add coconut milk, almond butter, pineapple, mango, chia seeds and cinnamon. Blend until smooth (about 30 seconds-1 minute). Add more coconut milk if the blender gets "stuck"
  2. Enjoy

Recipe:

Very Berry Smoothie

Serves: 2 servings
Prep Time :1 minute
Cook Time :1 minute
Total Time :2 minutes

Ingredients:

  • 1 1/2 cups of almond milk
  • 1 cup of frozen blueberries
  • 1 cup of frozen raspberries
  • 1 tbsp of flax seeds whole seeds, not "ground" flax seeds
  • 1 tsp of cinnamon

Instructions:

  • In a high power blender add flax seeds, blend for 15 seconds until seeds are "ground".
  • Add almond milk, blueberries, raspberries, and cinnamon
  • Blend again until smooth (about 30 seconds-1 minute). Add more coconut milk if the blender gets "stuck"
  • Enjoy
